Celeriac & Ginger Soup
This is a great soup for a busy Mom as it takes only 30 minutes to make. The ginger fragrance not only adds flavor but also has nurturing qualities, perfect for when you're feeling under the weather. Using an immersion blender really enhances the overall taste of the soup. My hubby and I enjoy pairing it with potato and peas samosas, a recipe I'll be sharing in the upcoming weeks. Celeriac & Ginger Soup

Yield: 8 servings
Ingredients:
1 cup fresh leek, washed and chopped
3 fresh celery ribs, chopped
2 carrots, chopped no peeling required (keep the goodness)
1 medium celeriac (celery roots), peeled and chopped
1 medium onion, peeled and chopped
4 cloves garlic, peeled and crushed
2 tablespoons fresh turmeric, peeled and chopped
1/4 cup fresh ginger, peeled and chopped
1 tablespoon avocado oil
2 L vegetable broth or water
salt and white pepper for taste
Instructions:
Heat up oil in the soup pot over medium heat. Add all the chopped vegetables and stir well with a wooden spoon. Allow the mixture to cook for about 10 minutes, or until the vegetables have softened and developed a lightly golden color.
Pour vegetable broth or water over vegetables in the pot until completely covered. If you opted for water instead of broth, you can enhance the flavor by seasoning with salt and a dash of white pepper. Allow the mixture to come to a boil, then lower the heat and simmer for approximately 15 minutes under a snugly-fitted lid.
Using an immersion blender, gently and carefully puree the soup until it reaches a velvety smooth consistency.
Serve with sprinkle chopped greens of your desire!
