Buckwheat Cookies

Preparation Time: Mixing ingredients: 5 minutes; resting in the fridge: 1 hour; rolling dough & cutting cookies: 10 minutes
Bake Time: 12 minutes
Yield: 3 dozen
Ingredients:
100 g unsalted butter, soft
40 g demerara or muscovado sugar
40 g white fine crystal sugar
pinch of sea salt
180 g buckwheat flour
1 large egg
1 tsp baking soda
1 tsp vanilla essence
1/4 tsp cinnamon powder or cacao (optional)
Instructions:
In a small bowl, whisk butter with sugar until fluffy.
Add all remaining ingredients and stir until combined. Don’t overmix it.
Form dough into a flat circle and wrap with clingfilm. Refrigerate for 1 hour.
Preheat the oven to 350ºF or 180ºC.
Dust the work table with buckwheat flour. Dust the rolling pin as well as the dough might be a bit sticky.
Roll the dough about 3 mm thick. Cut into 5 cm in diagram round cookies using a cookie cutter or a glass.
Place on a parchment paper lined cookie sheet.
Bake for 12 minutes.
Cool on the wire rack for 10 minutes.
