Chocolate Panna Cotta

Preparation Time: 25 minutes

Setting Time: 8 hours or overnight

Yield: 8 portions

Glassware: 8 coupe-shaped champagne glasses

Ingredients:

  • 15 ml (1 tablespoon} gelatine powder

  • 3 cups 2% milk

  • 200 g 72% dark chocolate, chopped

  • 85g sugar or birch sugar called xylitol(if your wish sucrose free dessert)

  • Greek yogurt or sour cream for garnish

Instructions:

  1. Pre-soak the gelatine in 1 cup of cold milk for 2 minutes until it softens. Heat up very gently in the non-stick pot for about 2 minutes, or until it reaches a lukewarm temperature and the gelatin has completely dissolved. It is crucial not to let the mixture boil during this process to ensure the desired consistency of the final product.

  2. Add the rest of milk and sugar. Heat the mixture gently until sugar dissolves and milk only reaches warm temperature. Do not let the mixture boil.

  3. Use a double boiler to melt the chocolate. To do this, put one pot on top of another with water in the bottom pot. Heat until it simmers. The steam will melt the chocolate in the top pot. Take it off the heat when all the chocolate has melted.

  4. Add quark cheese to the melted chocolate mixture, gently stirring with a spatula until the ingredients are thoroughly combined.

  5. Add gradually milk mixture to the chocolate mixture, pouring one cup at a time and stirring gently with a whisk until the mixture is smooth and well combined.

  6. Divide chocolate mixture between 8 champagne glasses.

  7. Refrigerate the panna cottas overnight or for at least 8 hours to ensure they are thoroughly chilled and set to a perfect, delicate firmness.

  8. Serve the delicate panna cottas with a dollop of creamy yogurt, tangy sour cream, or indulgent clotted cream for a delightful finishing touch.
