Energy Boost Salad

Preparation Time: 15 minutes

Yield: 2 servings = 2 loaded platefuls

Ingredients:

  •  1 small endive, wash and spin dry

  • 1 small head leaf lettuce, wash and spin dry

  • 1 small head radicchio “Italian chicory”, wash and spin dry

  • 2 well riped medium tomatoes from your garden, cut up

  • 1 English cucumbers, diced

  • 1/2 red onion, diced

  • 1/4 cup sunflower seeds

  • 1/4 cup pumpkin seeds

  • 1/4 cup sliced almonds

  • 1/4 cup unsalted cashews

  • 1/4 cup dried cranberries

  • 1/2 cup mini bocconcini cheese or crumbled goat or sheep cheese

  • balsamic vinaigrette ingredients: 2 tablespoons balsamic vinegar, 150 ml avocado or olive oil, pinch od sea salt and black pepper

  • handful of fresh edible flowers (borage, calendula, zucchini blossoms, nasturtium or violets)

Instructions:

  1. Divide the salad leaves between two plates. Top with equal amounts of tomatoes, cucumbers, and red onion. Add sliced almonds, cashews, pumpkin, and sunflower seeds for crunch. Scatter cranberries and cheese over each salad plate.

  2. In a food processor or blender, combine the rich balsamic vinegar, the avocado oil, and a pinch of salt and pepper. Blend the ingredients thoroughly until they are mixed well.

  3. Pour the dressing generously over the salads, and decorate each plate beautifully with a selection of vibrant edible flowers.
