If you are an avid hiker as I am, you’ve definitely considered at least once to buy energy bars or nut-based bars. I spend over an hour looking at different products in the grocery store and came to one conclusion that I will never buy any snack bars in the store again. Energy bars are big business. Convenient, yes, pricey, yes, but are they good for you? For example, these are some of the most frequent ingredients and I’ve chosen the healthiest ones: Fats blend (peanut butter, palm stearin, coconut oil, peanut oil), Chocolate flavoured coating (inulin from chicory, palm kernel and palm oil, brown rice protein, cocoa powder [processed with alkali], sunflower lecithin, salt), Peanut flour, Pea protein, Glycerin, Inulin from chicory, Rice flour, Peanuts, Brown rice flour, Cocoa powder, Sea salt, Tocopherols, Erythritol, Stevia leaf extract.

I like to introduce you to my very own healthy bar recipe. It has 7 ingredients: almonds, cashews, dates, dry raspberries from last year harvest, dry cranberries, flaxseed meal and dandelion syrup(honey). Quick and easy recipe.

Handcrafted Essential Nutrients Bars Recipe

Preparation Time: 20 minutes

Time to set in the fridge: 12 hours

Yield: 24 bars (7cm x 4 cm)

Equipment: cookie sheet 31 cm x 23 cm

Ingredients:

  • 1 cup almonds, crushed

  • 1 cup raw cashews, crushed

  • 1 cup dry cranberries

  • 1 cup dry raspberries

  • 1 cup dates, sliced

  • 1/2 cup flaxseed meal

  • 1/2 cup dandelion syrup or buckwheat honey

Instructions:

  1. Place almonds and cashews in the plastic bag and crush them with tenderizer mallet.

  2. Preheat oven to 325°F or 162°C. Line a rimmed baking sheet with parchment paper. Roast crushed almonds and cashews in a single layer for 5-10 minutes depends on your oven until fragrant and golden brown, stirring once.

  3. Heat up the dandelion syrup until hot but not boiled.

  4. Mix all dry ingredients and add hot dandelion syrup until well combined.

  5. Spread the mixture over a parchment lined cookie sheet.

  6. Cover the top with parchment paper and press down evenly with a rolling pin.

  7. Place heavy books to compress the mixture. Place it in the fridge over night or at least for 12 hours.

  8. After 12 hours, cut into 24 pieces and wrap each piece in parchment paper to prevent from sticking and for easier handling.

  9. Place in the container and put it back in the fridge for fresh keeping.
