Irish Oat Crackers

Yield: 24 crackers
Ingredients:
150 g whole wheat flour
80 g unsalted butter, soft
20 g granulated sugar or natural sugar substitute such as birch sugar
1 large egg. room temperature
80 g rolled oats
1/4 tsp sea salt
1/2 tsp baking powder
Instructions:
Preheat oven to 392ºF or 200ºC.
Line a big baking tray or two small trays with parchment paper.
Place the unsalted butter and granulated sugar in a mixing bowl and whip them together until they are well combined and the mixture turns pale in color and fluffy in texture.
Add an egg into the mixture and beat for 2 minutes until well combined. Next, add the flour, oats, baking powder, and salt to the mix. Utilize the mixer paddles to blend everything thoroughly, forming a rough dough. Transfer the dough onto a floured surface and knead it until achieving a smooth texture.
Roll out the dough to a thickness of 5 mm and carefully cut out rounds using a 5 cm cookie cutter. Be sure to gather the leftover dough scraps, bringing them together and rolling them out again until you have used up all the dough.
Place the shaped dough rounds gently on a baking tray using a cake spatula, making sure to leave some space between each cracker. Slide the tray into the preheated oven and bake for approximately 12 minutes or until the crackers turn a beautiful shade of golden brown on the edges.
Let the crackers cool on the wire rack.
Crackers can be stored in glass jars to maintain their freshness and crunch for an extended period of time.
