French Onion Roasted Sausage Pomodoro Sauce served with Spelt Pasta

Wholesome ingredients can be the key to maintaining your youth and overall well-being. In today's world, where food prices are consistently soaring due to inflation, many individuals are faced with the challenge of providing nourishing meals for their families. One effective solution to this dilemma is to begin preparing meals from scratch. Let’s start with Roasted Tomato Sauce (Pomodoro Sugo in Italian or Pomidorowy Sos in Polish) which is my own recipe that embraces local tomato growers. Please review my recipe Roasted Tomato and Pepper sauce.

The next important ingredient for this recipe is spelt pasta. I love the flavor of spelt. Spelt (triticum Spelta) is an ancient grain, literally thousands of years old...the third original grain after emmer and einkorn. It has been referred many times in the Bible, "spelten cakes sustained Moses and the Children of Israel on their exodus out of Egypt". Spelt originated in the fertile crescent region also referred to as the Garden of Eden.  It is a grain similar to wheat family which has not been genetically modified since its existence. It is not gluten free but people with gluten intolerance might find it more digestible.

Vegetables are part of healthy plant-based diet. Growing your own vegetables even on the patio or balcony, can have you and your family get connected with the nature. The flavor and aroma are more intense than store-bought ones. It saves you money and gives you enormous satisfaction.

Yield: 10 portions

Ingredients:

  • 400 g Raw duBreton French Onion Roasted Sausage or substitute with vegan sausage

  • 100 g fresh mushrooms

  • 100 g fresh pepper, diced

  • 1 medium onion, diced

  • 4 garlic cloves, minced

  • 2 celery ribs, chopped

  • 2 bay leaves

  • 1 tsp fresh or dried basil, chopped finely

  • 1 tsp fresh or dried thyme, chopped finely

  • 1 tsp fresh or dried lovage, chopped finely

  • white ground pepper to taste as needed

  • sea salt to taste as needed

  • 450 g spelt flour pasta, cook as per instructions

  • 60 ml olive oil

  • 1 tablespoon fresh parsley, chopped finely

  • fresh basil for garnish(optional)

  • 1 cup grated Wildwood Aged Cheese or any Gruyere cheese

  • 1 liter Roasted Tomato and Pepper sauce (homemade or purchase)

Instructions:

  1. Bring water to boil in the medium saucepan, add raw sausage and let it come to boil. Lower down the heat, let it cook covered for 5 minutes. Remove sausage from the saucepan and let it dry for few minutes.

  2. Heat the oil in a large frying pan over moderate heat. Add the sausages and sauté for 10-15 minutes until golden brown all over.

  3. While sausages are cooking, cut all vegetables and grate the cheese.

  4. When sausages are cooked set them aside for 5 minutes to cool down. Cut the sausage into slices.

  5. Re-use the frying pan with all remaining fat from sausages, add onion and garlic. Sauté for 2 minutes. Add the rest of vegetables and sliced sausages. Toss all ingredients, add tomato sauce and basil, thyme and lovage. Cover and let it simmer over lower heat, barely bubbling for an hour. Remove from heat. Add fresh parsley, taste the sauce and adjust the seasonings with salt and pepper.

  6. Boil the spelt pasta as per instructions, drain, toss with the sauce, and serve at once with grated cheese. Garnish with few leaves of fresh basil.
