Plum Streusel Cake

Plum Streusel Cake

Yield: 12 servings (could be sliced into 20 small squares)
Ingredients:
250 g soft unsalted butter
1 cups granulated sugar
2 eggs, room temperature
1.5 cups all purpose flour
0.5 cup potato flour
1 teaspoon vanilla essence
2 teaspoons baking powder
3 tablespoons sour cream, room temperarture
500 g blue plums or Italian plums, cut into eighths, pits removed (weight of prepared plums)
For the Streusel:
1 cup all-purpose flour
1 cup sugar
1/2 cup butter, chilled
Instructions:
Preheat oven to 350°F or 177° C.
Wash plums, remove pits and cut each half into 4 quarters. The smaller the pieces the more flavor is added to the cake.
In a large bowl, sift flours with baking powder. Separate egg yolks from egg whites.
Cream butter with sugar and vanilla until light and fluffy. Add in egg yolks and sour cream. Combine until smooth. Add the flour mixture. With spatula mix in the flour until partially combined.
Whisk egg egg whites until soft peak is formed. Gently fold the egg whites into the mixture to form a cake batter. Batter will be very thick.
Scoop out he cake batter into a lined baking pan size 23x33cm. Use your hands or spatula to evenly spread the batter in the pan
Top the cake with plum pieces, skin facing down. Gently press the plums into the batter.
To make the streusel: Place all the ingredients in a medium-sized bowl and use your fingers to bring it all together. Work with the mixture until it's thoroughly combined and forms a rough sand and clumpy texture. Sprinkle the streusel over the top of the cake.
Place cake in the oven and bake for 50 minute or until toothpick comes out dry.
Allow the cake to cool down.
