Old Fashioned Lemonade

Flavour developing time: 2 hours
Yield: 1 litre
Ingredients:
2 organic unwaxed lemons
1/2 cup cane sugar or birch sugar if on restrictions
1 liter boiling water
spring of mint or lemon balm (optional)
Instructions:
Leave the lemons on a warm windowsill facing the sun for a few days to sweeten them up and develop their flavor.
Using a potato peeler, remove the yellow peel from lemons avoiding any bitter white pit.
Put it in a large heatproof pitcher, add the sugar, and pour over the boiling water.
Stir well to dissolve the sugar, cover, and let cool completely. I like to keep it in the sunny spot for at least 2 hours to intensify the color and the flavor.
Squeeze the juice from the lemons, strain, and set aside.
When the lemon scented water is cold, stir in the lemon juice.
Chill well and serve poured over ice, with spring of mint, lemon balm or use a lemon or orange slice for garnish.
